This Sunday passed my sweets and his family were joining my family for lunch, the first meeting(no i was not stressed or anxious). I was the going the cooking but for some reason i couldn't focus on the meal itself, i was just thinking cake... Because of life, work and some times laziness,  i don't often get a chance to bake. I wanted good old fashion chocolate cake and hmmmmmm.....snowballs. Yes, that's what i want.

 As for the food, i was thinking roast lamb with a um.....veggy something.

I got cracking with the baking first. The recipe i use for my snowballs is actually a plain cake. It's been in my moms ancient cookbook for years. Not sure where it comes from, neither does my mom. Just swapped normal what flour for gfree flour.

snowballs
250g butter/store margarine
2 cups sugar
5 large eggs
4 cups gluten free flour( entice rice flour, picture on right)
2 cups milk
1 tbspn vanilla essence
4 teaspoon gfree baking powder.

snowball syrup
apricot jam
water
red food colouring

desiccated coconut

Preheat oven at 180 c
Mix butter and sugar until fluffy and light cream in colour. Add eggs in, one at a time. Add rest of the ingredience, mix well.
Bake for 15 to 20 mins, until lightly golden.

For the syrup i never measure, i use my own discretion.
Mix jam, water and colouring in a pot over stove until in forms a syrup. Cool down. Dip the cake once cooled down in syrup then roll in coconut.
This recipe makes about 48 snowballs in a muffin or cupcake tray. So i do 24 snowball and 24 cupcakes.
To decorate the cupcakes i use whatever i find in the cupboards at the time.


For all my cakes i use Entice Rice Flour( in the green packet). It replaces normal flour cup for cup. I have found it to be the best product on the shelves in South Africa for baking cakes only. This flour is not only made from rice flour, there are other flour added. I normal get it at Dischem.

As for the chocolate cake its a family secret and before i remembered to take a picture it was already been devoured.... sorry. It definitely was the winner for the day.

Lunch went off without a hitch and everyone got on great.
